About the Recipe

Nacho ingredients are a staple in my pantry at all times. It's a no fuss meal that's delicious and fun to make, my granddaughter is a picky eater and my son is vegan so I'll have to find a vegan version for him, so if you have one that you don't mind sharing please submit here on our page.

Ingredients

  • 10 ounces tortilla chips, such as Tortitos

  • 1 pound ground turkey (80% lean)

  • 4 tablespoons taco seasoning

  • 1 small onion (chopped)

  • 3/4 cup shredded Cheddar cheese

  • 3/4 cup shredded Monterey Jack cheese

  • 3-4 tomatos (diced)

  • 1 cup black beans (rinsed and drained)

  • sour cream

  • sliced jalapeno peppers (optional)

Preparation

Step 1

Preheat oven to 350°. Over medium heat, cook the ground turkey stirring often to break up the meat, add the chopped onions to the meat. Continue stirring approximately 15 minutes or until meat is browned and broken apart in small pieces. Drain any standing liquid. Add taco seasoning to the meat and mix well.


Step 2

Spread the tortilla chips on the pan. Add a generous portion of meat on top, followed by black beans and cheese.


Step 3

Bake until the cheese is melted, 10 to 15 minutes. Top with tomatoes, jalapeno peppers and sour cream. Serve immediately while warm.
